Country people, not being able to afford expensive copper dishes developed a wide range of enameled earthenware crockery; suitable for using on the fire, their main feature is that of cooking foods slowly and keeping them hot for a long time.

After almost disappearing with the arrival of aluminum, they are now reproduced by craftsmen and used in the most sought after typical Tuscan restaurants.
